Carrot Muffin Recipe




I made this for today's snack box, it is a moist and yummy muffin but so easy to make.

Carrot Muffin Recipe

4 table spoons flour
1 teaspoon baking powder
1/2 teaspoon baking soda
a pinch of salt
4 table spoon brown sugar
2 table spoon vegetable oil
1 carrot, peeled, grated
1/2 teaspoon cinnamon
2 eggs

Dry ingredients : In a bowl, mix flour, baking powder, baking soda, cinnamon, salt.

Wet ingredients : Beat eggs in another bowl, add sugar one at a time, beat well until light. Add and beat the vegetable oil.

Stir well the dry to the wet ingredients. Add grated carrot.
Pour into the greased muffin tin, and put it in the oven for approx 20 mins.
Hence, the oven in my new kitchen has no temp measurement, just numbers from 1 to 10, so i put the temp at 7.

You may add nuts or raisins for additional flavor and texture.

This recipe only for three muffins...because there's only 3 of us, hehehe..

The verdict : Sabina ate 2 out of 3...so that's means yum yum yum
